with Green Harissa, Feta, Roasted Herb Tomatoes, toasted almonds and arugula

ingredients:

Lamb

  • –  4 lb Boneless Leg of Lamb
  • –  2 Tablespoons of fresh Rosemary, chopped
  • –  2 teaspoons Fresh Thyme, chopped
  • –  6 cloves minced garlic
  • –  Lemon Zest
  • –  Salt & Pepper

    Green Harissa

  • –  6 Jalapeno Peppers
  • –  4 Serrano Peppers
  • –  2 Scallions
  • –  2 Tablespoons Cilantro, minced
  • –  Salt, TT

    Roasted Herbed Tomatoes

  • –  2 Pints Cherry Tomatoes
  • –  2 teaspoons fresh rosemary
  • –  Borsari Salt

    Toasted Almonds

– 1 cup chopped almonds

8 oz Feta Arugula

Smoke on Big Green Egg with Cherry Wood and a few sprigs of Rosemary

Pair with a light and perfumed red.
